Wine profile
The perlage is fine and persistent. The nose reveals green apple, lemon, grapefruit zest, and a pleasant sea breeze, followed by light notes of toasted bread, biscuit, and yeast. The palate is fresh, precise, and dynamic, with a beautiful citrus tension that evolves into a delicate creaminess. The finish is long, dry, and elegant, with a perfect balance of fruit, acidity, and aging on lees.
The L'Ormarins signature
Each bottle is born in the cellar exclusively dedicated to the Rupert family's Cap Classique wines, where time is considered a fundamental ingredient. Grapes are harvested at dawn and pressed whole-bunch to preserve their freshness. After the second fermentation in the bottle according to the Traditional Method, the wine rests for 2 to 3 years on its lees, developing finesse, harmony, and a creamy texture that characterizes the L'Ormarins style.
Pairing
Perfect as an aperitif, it magnificently accompanies oysters, crustaceans, sushi, raw fish, fried seafood, poultry, fresh cheeses, and delicately spiced dishes.
Serving
Serve at 8-10°C in a tulip glass to enhance its aromas and complexity.

The grapes come from selected vineyards in the Western Cape, grown on decomposed granite soils. The 2020 vintage benefited from the return of rainfall after a long period of drought, favoring early flowering, regular ripening and healthy bunches, rich in aromas and perfectly balanced.
In the cellar
In the cellar
The grapes are hand-picked in the early morning and whole-bunch pressed. Free-run must and press fractions are vinified separately to preserve their quality. After fermentation, the wine is blended and re-fermented in the bottle according to the Traditional Method. Aging for 2-3 years on the lees, followed by approximately 3 months after disgorgement, imparts elegance, a fine perlage, and a pleasant aromatic complexity.
