Nel vigneto

The wine comes from the vineyards of three areas belonging to the estate: Stellenbosch, Elgin Valley and Boschendal farm. The variety of the vineyards gives complexity and character to this Chardonnay. After careful pruning of the vines and the elimination, during the month of November, of the excess shoots to leave only the most luxuriant ones, the grapes were harvested by hand between mid and late February 2019. The 2019 harvest gave a harvest of limited quantities but with excellent concentration and quality.

In the cellar

All Chardonnay grapes are pressed into whole bunches and the must is left to rest for two days. Fermentation in stainless steel tanks follows, with the addition of selected yeasts. A part of the wine (70%) ages in French oak barrels for a further 10 months: 12% in new barrels and the remaining percentage in 2nd and 3rd use barrels. During this period, the barrels are subjected to bâtonnage on a monthly basis to enhance the peculiarities of the wine. The remaining 30% of Chardonnay ages in steel tanks.
