Chardonnay 2023 - Boschendal 1685

Wine of Origin South Africa, Franschhoek.

The wine comes from the vineyards of three areas belonging to the estate: Stellenbosch, Elgin Valley and Cape Town. The variety of the vineyards gives complexity and character to this Chardonnay. After careful pruning of the vines and the elimination, during the month of November, of the excess shoots to leave only the most luxuriant ones, the grapes were harvested by hand.

La fermentazione spontanea è iniziata in vasche di acciaio inox. Dopo che circa 2° Brix sono stati fermentati naturalmente, sono stati aggiunti lieviti selezionati e una parte del mosto è stata trasferita in barrique di rovere francese per completare la fermentazione.

Ancora sulle fecce primarie, il vino ha maturato per ulteriori 10 mesi in barrique: il 12% in legno di primo passaggio e la restante parte in barrique di secondo, terzo e quarto passaggio. Durante questo periodo le botti sono state sottoposte a un rigoroso regime di bâtonnage (rimescolamento delle fecce) per arricchire la sensazione di volume e morbidezza al palato.

L’assemblaggio finale è composto per il 70% da Chardonnay fermentato e affinato in legno e per il 30% da Chardonnay fermentato in acciaio. Anche quest’ultima componente è rimasta sulle fecce primarie per l’intero periodo di 10 mesi.
