Wine made from 100% Chenin Blanc in the Agter-Paarl area, from unirrigated dryland vineyards, fed only by natural rainfall. The vineyards are 48 years old and have been registered as old vines since 1977. The soils are composed of decomposed granite and Malmesbury shale; the average yield is 8 tons per hectare.

In the cellar
Whole clusters were pressed without skin contact, selecting only the finest free-run juice. After decanting, the must underwent its first alcoholic fermentation in stainless steel. The wine remained on its lees for six months without the addition of sulfur dioxide, then it was stabilized and filtered before the addition of sugar and yeasts for the second fermentation in the bottle. Aging on the lees in the bottle for at least 18 months before disgorgement.
