In 1971, with Kaapse Vonkel, Frans Malan - founder of the Simonsig wine estate - became the first producer of Méthode Cap Classique in South Africa.
With a delicious salmon color, this lively Demi-Sec Cap Classique features an elegant and persistent perlage. A delicate bouquet of strawberries and cranberries, accompanied by subtle floral notes. Harmonious and silky bubbles, followed by a fresh and crisp finish. A perfectly balanced Nectar Cap Classique, with good structure and balanced acidity. Delicious on its own or with your favorite dessert.
Food pairings: Perfect with Chinese and Thai dishes, seafood salads, red fruit salads, sushi, lobster thermidor and delicious desserts.

In the vineyard
Abundant rainfall in 2021 ensured good water reserves for the vines. A long, cool winter delayed the start of the season, followed by consistently mild weather in Stellenbosch. Slow, gradual ripening favored excellent aromatic concentration in the grapes, with balanced acidity and a low pH. An excellent vintage, marked by elegance and finesse.

The grapes are hand-picked and gently pressed whole bunches to obtain the cuvée, the purest juice. Fermentation takes place in stainless steel at low temperatures with selected yeasts to enhance freshness and aromas. After a second fermentation in the bottle, the wine ages on the lees for 15 months. A generous dosage at disgorgement brings balance to the Demi-Sec profile.
