In 1971, with Kaapse Vonkel, Frans Malan - founder of the Simonsig wine estate - became the first producer of Méthode Cap Classique in South Africa.
A lively Cap Classique Demi-Sec with a delicate lemon color and a fine, persistent perlage. On the nose, it offers inviting aromas of white peach and apricot, with subtle floral notes. On the palate, peach, baked apple, and a hint of honey biscuits are found. The long-lasting acidity makes this South African Cap Classique harmonious and unforgettable.
Food pairings: Pair it with mature, creamy cheeses like Camembert, Brie, or Gorgonzola. It also pairs well with fruity desserts like orange, lemon, and mango, or with hazelnut pralines.

The 2021 winter rains ensured good water availability for the vines. A long, cool winter delayed the start of the season, bringing cooler conditions to the Stellenbosch region of South Africa. Slow ripening favored excellent aromatic concentration in the Cap Classique grapes, with good acidity and low pH. An excellent, elegant, and refined vintage.

The grapes are hand-picked and pressed whole to obtain the cuvée, the purest juice. Fermentation takes place in stainless steel at 16°C with selected yeasts. This Cap Classique Simonsig is refermented in the bottle and aged for 15 months on the lees. A higher dosage is added at disgorgement for a balanced Demi-Sec.
