Why we like it
This rosé focuses on elegance rather than color intensity. Pinot Noir offers small red fruits and a delicate structure, while Chardonnay keeps the sip taut and vibrant. The long aging on lees adds depth and creaminess, making it perfect for an aperitif or to accompany an entire meal.
Wine profile
The color is a refined coral pink, crossed by a very fine and persistent perlage. The nose reveals wild strawberry, cherry and small red fruits, accompanied by lemon zest and light notes of toasted bread and biscuit. On the palate it is fresh, precise and harmonious: the lively citrus acidity supports the fruit and gradually gives way to a pleasant creaminess. The finish is long, elegant and incredibly fresh.
The L'Ormarins signature
Each bottle is born in the cellar exclusively dedicated to the Rupert family's Cap Classique wines. The grapes are harvested at dawn and pressed whole cluster to preserve their freshness and aromatic finesse. After the second fermentation in the bottle according to the Traditional Method, the wine ages for 2 to 4 years on its lees, developing a creamy texture, a refined perlage and the complexity that distinguishes the L'Ormarins style.
Food pairing
Perfect as an aperitif, it magnificently accompanies tuna or salmon tartare, shellfish, sushi, fish carpaccios, poultry, delicate cured meats, fresh cheeses and Mediterranean cuisine.
Serving
Serve at 8-10°C in a tulip glass to enhance its aromas and complexity.

In the vineyard
The grapes come from some of the Rupert family's best vineyards: Altima in Elandskloof, L'Ormarins in Franschhoek, Groenekloof (Darling) and Robertson. The decomposed granite and Oakleaf/Tukulu soils, together with the diverse microclimates, produce Chardonnay and Pinot Noir of great balance, freshness and elegance, ideal for Cap Classique production.

In the cellar
The grapes are hand-picked in the early morning and whole-bunch pressed. Free-run must and press fractions are kept separate throughout vinification. After the fermentation of the base wine, the second fermentation takes place in the bottle according to the Traditional Method. Aging for 2-4 years on the lees, followed by about 3 months after disgorgement, imparts complexity, a fine perlage, and the typical creaminess that characterizes this rosé.
