L'Ormarins Brut Classique Rosé - Anthonij Rupert

Varietal: Pinot Noir 51%, Chardonnay 49%.

This Méthode Cap Classique brut rosé has a coral pink color with delicate, persistent bubbles. Strawberry and red fruit aromas stand out on the nose. These aromas are still present on the palate, along with cherry, strawberry, and red fruits. The fresh and lively acidity of lemon and citrus adds character to the taste. A broader creaminess then develops with characteristic notes of toasted bread and biscuit. Balanced and harmonious, this sparkling wine is well-structured, long, and complex, yet fresh and lively throughout.

Table pairings: Oysters, shellfish, salads. Excellent as an aperitif.

In the vineyard

The Chardonnay vines are grown in vertical espalier and are located in Darling and to a lesser extent in L'Ormarins and Robertson. These soils are composed of clayey shale and rich in organic matter. The Pinot Noir comes from vineyards located mainly in the L'Ormarins estate (Franschhoek), to a lesser extent in the Altima (Elandskloof), Darling and Robertson estates, all located on steep slopes at around 180 meters above sea level. The soil is in some parts decomposed granite and in others alluvial soil.

In the cellar

The grapes are hand-picked and pressed in whole bunches. The juices from the different pressings are kept separate. The must is left to rest on the skins and inoculated with yeasts. After fermentation, the base wine is filtered from the skins and sugars are added before the second fermentation in the bottle.
During bottling, yeast is added to the sweetened base wine and mixed. A long, slow secondary fermentation begins, followed by further aging in the bottle on the lees for 2-4 years.
After this period, disgorgement takes place, during which a dosage is added (a mix of base wine and sugar, to adjust the sweetness of the wine). Further refinement follows for about 3 months before being released for sale.
