Paul Sauer\'s color is ruby red with purple reflections. On the nose, complex and intense aromas of blackcurrant, plums, spiced oak e cigar box. On the palate, first soft hints of fruit and then an elegant cocktail of tomato, black and red fruits and elegant tannins. A rich and deep wine, with perfect integration of fruit and wood, and a delicate acidity. To be tasted with passion, Kanonkop\'s Paul Sauer is a wine of immense purity, depth and freshness.

Expected evolution: Paul Sauer will give its best up to 25 years after bottling.

In the vineyard

Paul Sauer of Kanonkop in 2017 was the product of a winter characterized, for the third consecutive year, by low rainfall and warmer than usual day and night temperatures. Spring was early and the harvest season was very dry, with cooler nights in February. The sensitivity and experience of the Kanonkop team allowed us to harvest at the perfect moment of grape ripeness. The vines are at least around 29 years old and grown in dry, clay-rich soils, locally referred to as "Hutton". Limited artificial irrigation. The production was 4 tons / ha.

In the cellar

After the harvest, the grapes are de-stemmed and the must ferments in open concrete tanks at a temperature of about 29 ° C and macerates on the skins for 5 days. After malolactic fermentation, the wine ages for 24 months in Nevers French oak barriques (100% new). Paul Sauer is finally bottled; this is followed by a further refinement of a few months before being marketed.
