Varietal: Cabernet Sauvignon 69%, Cabernet Franc 17%, Merlot 14%.
On the nose, Paul Sauer from Kanonkop presents a meeting of worked earth and red and black currants, and cedar. Paul Sauer is a refined wine with an elegant structure, firm tannins and, thanks to the clever use of new oak barrels, creates the perfect backdrop for the complex spectrum of fruit it delivers on the palate. Long and persistent finish.
Expected evolution: Paul Sauer will give its best until 25 years after bottling.
Total production: 42'000 bottles.
Food Pairing: Paul Sauer is a perfect match with steaks, roast leg of lamb and aged cheeses.

In the vineyard
The previous winter was characterized by sufficient rainfall and very cold days. Throughout the harvest period the weather remained favorable, with relatively warm days, but with no significant heat waves and cool night temperatures.
Vineyards average 30 years old and are grown in dry, clay-rich soils, locally referred to as “Hutton.” Limited artificial irrigation.
Production was 4 tons/ha.

In the cellar
Fermentation takes place in open-top concrete fermenters at 29°C. Manual boiling was carried out every 2 hours during fermentation. The juice was separated from the skins after 5 days. After malolactic fermentation, Paul Sauer is aged for 24 months in 225-liter Nevers French oak barrels, 100% new.
