The color of this South African wine is garnet red. On the nose, it has intense aromas of ripe plum e berries. In the mouth the wine is balanced, the wood is well integrated; berry flavors emerge combined with floral notes and delicate spice nuances. A wine of depth, complexity and grace.

In the vineyard

Saronsberg is a South African winery located in the Tulbagh Basin, surrounded by the Obiqua Mountains to the west, Winterhoek Mountain to the north and the Witzenberg Mountains to the east, whose peaks exceed 1,500 meters. The microclimate of the area is temperate, with characteristics similar to the Mediterranean climate. The soils are rich in clay. The 2017 vintage was characterized by a hot and dry climate, which led to a slightly lower production than in 2016, but of excellent quality. The average production was 5.4 tons / ha. The vines are about 12 years old.

In the cellar

From the two best Shiraz vineyards comes this excellent blend from South Africa. The grapes are harvested by hand early in the morning and cooled down to 4 °. The Shiraz and Mourvèdre grapes are then grouped and de-stemmed. The must is left to rest for 3 days, at a temperature of 9 °. The Shiraz and Mourvèdre tanks are heated to 18 ° and inoculated with selected yeasts. The fermentation temperature reaches 28 ° and is then reduced to 24 °. After fermentation, the Shiraz is subjected to maceration on the skins for 21 days, before being decanted into 100% new Allier French oak barriques. The Mourvèdre ends the fermentation in barrels, as well as the Viognier, which ferments separately in the cold. After the malolactic fermentation, the wines are blended and continue the fermentation in cask until reaching a total of 20 months. The wine is then filtered, bottled and aged for 11 months before being marketed.
