Why we like it

Full Circle is Saronsberg's most ambitious red: intense, yet crafted not to lose elegance. Shiraz and Mourvèdre provide depth, Grenache extends the fruit, while small percentages of white grapes add perfume and momentum. We chose it because it offers the power of Tulbagh with readable tannins and a freshness that makes the wine more dynamic than its structure suggests.

Wine profile

The entry is broad and concentrated, with ripe plum and red fruits. Violets and spices lighten the aromatic profile, while the oak integrates into the texture without emerging in isolation. The body is full, supported by present acidity and firm but already accessible tannins. The finish is long, layered, and spicy, with a floral return.

The winery's signature

The base comes from the winery's two best Shiraz vineyards. The grapes are hand-picked, cooled, and subjected to a careful selection of bunches and berries. The different varieties are vinified separately, with calibrated macerations and a portion of whole clusters. The Viognier ferments cold in barriques. After blending, the wine matures for a total of 20 months in new French Allier oak barriques, without fining before bottling.

Food pairing

Ideal with beef brisket, leg of lamb, game, and pork cheek. Also pairs well with pappardelle with ragu, grilled mushrooms, and aged cheeses.

Serving

Serve at 16-18 °C. Decanting for about an hour is recommended. Use a large, structured red wine glass.

In the vineyard

The vines are on average 16 years old and grow on structured soils, rich in gravel and weathered schist. The Shiraz vineyards form the backbone of the blend. Grapes are hand-picked in the early morning and rapidly chilled to 4 °C before sorting.

In the cellar

Shiraz and Mourvèdre are vinified separately after careful selection. A portion of the grapes ferments as whole clusters; the must undergoes a brief cold maceration and a total maceration of up to 21 days. Viognier ferments separately in barriques. The wines complete malolactic fermentation in wood and age for 20 months in new French Allier oak barriques. The wine is not fined.
