The Cape Flora Kingdom (a unique floral region recognized as a UNESCO World Heritage Site) is home to the vibrant Malachite Sunbird, often spotted flitting among the protea flowers that flourish alongside Simonsig Winery's Sauvignon Blanc vineyards. These vineyards are planted at the highest elevation, where the cool ocean breeze from nearby False Bay creates the ideal climate for this grape variety.
This Sauvignon Blanc is pale in color and offers a bouquet of guava, melon, and Cape gooseberry. On the palate, subtle hints of fig and grapefruit are detected, accompanied by a fresh acidity and a harmonious finish. It is the perfect Sauvignon Blanc for any occasion. Best enjoyed young, with further flavor development within 12 to 18 months.
Food Pairings: Perfect as an aperitif on a hot summer day, this wine also pairs very well with rich, fatty foods. Try it with salads, goat cheeses, lemon-garnished fish dishes, and Thai cuisine.

Significant rainfall occurred at the start of the season, but from late September to mid-February, there was little or no rain. These conditions, combined with high summer temperatures, accelerated the ripening of early grape varieties, resulting in lower yields and, in some cases, less irrigation water available. The dry climate, however, allowed for excellent-quality grapes.

The grapes, harvested in the morning based on aromatic maturity, were processed sparingly. Some lots had limited contact with the skins to enhance the fruit and preserve acidity. Gentle pressing and low juice recovery favored elegance. The clarified juice was fermented slowly between 12 and 14°C with selected yeasts to intensify the aromas.
