Why we like it

Jordan’s Cabernet Sauvignon has a classic profile, yet it is less rigid than the varietal might suggest. The ripe fruit and soft tannins make it approachable now, while cedar, bramble, and tobacco add depth. We chose it because it combines the character of Stellenbosch with concrete drinkability: it is structured but not heavy, and it works well even for those new to South African reds.

Wine profile

The entry is full, marked by blackcurrant and bramble fruits. In the mid-palate, cedar and toasted tobacco emerge, while a measured freshness keeps the sip taut. The structure is solid but not opulent; the tannins are ripe, polished, and well-integrated. The finish is dry and persistent, with a return of dark fruit and spices.

The winery's signature

The grapes come from different slopes of the estate. Fermentation takes place in stainless steel tanks, with three pump-overs per day; some batches continue maceration after fermentation. Gravity movement and delicate pressing favor extraction and balanced tannins. After malolactic fermentation in barriques, the wine ages for 18 months in new and used French oak.

Food pairing

It pairs with sliced beef, roasts, mildly spiced braised meats, and lamb chops. It is also suitable for lasagna with ragù, polenta with mushrooms, and medium-intensity aged cheeses.

Serving

Serve at 16-18 °C. Thirty minutes of oxygenation is beneficial, especially in the early years. Opt for a large, structured red wine glass.

In the vineyard

The vineyards are situated in Stellenbosch Kloof, on west and north-facing slopes, at altitudes between 200 and 240 metres. The soils are classified as Glenrosa and Hutton. Breezes from False Bay and the Benguela current make the mesoclimate cooler than the inland Stellenbosch areas. The vines are between 35 and 37 years old.

In the cellar

Harvesting took place between March 28 and April 8, 2022. Fermentation in steel involves three daily pump-overs; some tanks undergo post-fermentative maceration. The wine is gently pressed, undergoes malolactic fermentation in barriques, and ages for 18 months in new and used French oak. Before bottling, it undergoes a light filtration.
