Why we like it

TWO shows how Sauvignon Blanc and Sémillon can go beyond the simple contrast between freshness and softness. The former provides tension and citrus notes, while the latter adds volume and depth. Amphora, acacia, and different woods broaden the texture without sacrificing precision. We chose it for those seeking a significant white wine, capable of accompanying food and evolving beautifully in the bottle.

Wine Profile

The entry is taut, with lime and grapefruit. The palate expands with green plum, white flowers, and yellow fruit, gaining a creamy texture. The acidity remains bright, holding together concentration and volume. The finish is long, fresh, and defined, with the Sémillon leaving a broader sensation and the Sauvignon Blanc bringing the wine back to verticality.

The winery's signature

The Sémillon is whole bunch pressed; the Sauvignon Blanc is destemmed and remains on the skins for 6-18 hours before pressing. Fermentation takes place in 600-liter barrels and clay amphorae. The wine ages for 12 months on coarse lees: 15% in amphora, 10% in new oak, and the rest in woods from the second to the eighth passage. French and Austrian oak are used, along with a portion of French acacia.

Food pairing

Pairs with salmon sashimi, grilled fish with olives and capers, shellfish, and smoked dishes. In Italian cuisine, it is excellent with lemon risotto, baccalà, vitello tonnato, and pasta with molluscs.

Serving

Serve at 10-12 °C. Open the bottle 15-20 minutes beforehand. Use a large, structured white wine glass.

In the vineyard

2024 was the earliest harvest ever recorded at the estate. After a very cold and rainy winter, the hot and dry summer led to rapid ripening, small berries, and concentrated flavors. The wind limited vegetation growth and improved grape aeration. Sauvignon Blanc was harvested from February 7th and Sémillon on February 29th.

In the cellar

The Sémillon is whole-bunch pressed; the Sauvignon Blanc is destemmed, crushed, and undergoes 6-18 hours of skin contact. Fermentation takes place in 600-liter barrels and amphorae. Aging lasts 12 months on gross lees, with 15% in amphorae, 10% in new wood, and the rest in barrels from second to eighth passage, including Austrian oak and French acacia.
