Wine Profile

The bouquet expresses lemon zest, ripe orange, and yellow peach, enriched by delicate notes of biscuit, hazelnut, and vanilla. On the palate, it is full and enveloping, with a creamy texture supported by vibrant freshness. The balance between fruit, minerality, and wood leads to a long, elegant, and persistent finish, inviting the next sip.

The Jordan Signature

Jordan's goal is to produce a Chardonnay where each vineyard contributes a different nuance. The grapes are harvested at different times based on their ripeness and vinified separately. Fermentation primarily takes place in French barriques, where the wine remains on its fine lees for 9 months with periodic bâtonnage, developing complexity, balance, and a particularly silky texture.

Food Pairing

Perfect with lobster, shellfish, buttered fish, mushroom risottos, roast chicken, white meats, soft cheeses, and dishes with creamy sauces.

Serving

Serve at 10-12°C in a large glass. Allowing it to breathe for a few minutes in the glass enhances its aromatic complexity.

Wine of Origin Stellenbosch, South Africa.

In the vineyard

The vineyards are located in Stellenbosch Kloof, between 250 and 310 meters above sea level, on Glenrosa and Hutton soils. South and east-facing aspects, combined with breezes from False Bay and the cold Benguela current, maintain significantly lower temperatures compared to inland Stellenbosch, favoring slow maturation and high aromatic concentration. The vines, aged between 25 and 40 years, contribute to the wine's complexity.

In the cellar

The grapes are harvested between January 26 and 30 at different ripeness levels and vinified separately. 71% of the must ferments in 228-liter French oak barrels (24% new, 45% second-fill, and 31% third-fill), while the remaining 29% ferments in stainless steel to preserve freshness and aromatic precision. The wine then ages for 9 months on its fine lees with periodic bâtonnage before final blending.
