Barrel Fermented Chardonnay - Jordan
Varietal: 100% Chardonnay.
This South African Chardonnay has a thousand facets, thanks to its origin from vineyards located in different blocks of the property and thanks to the harvest carried out at different degrees of ripeness of the grapes. The result is a perfectly balanced Chardonnay in its elegant complexity, bold and graceful at the same time.
In the mouth it has notes of lemon biscuit and of very ripe oranges.
Pairings at the table: Ideal with dishes based on fish, molluscs and crustaceans, meatswhite e slightly seasoned cheeses. Great like appetizer.

The Jordan Wine Estate vineyards are located on the hills around Stellenbosch, about 300m above sea level. This area enjoys very favorable climatic conditions, as it is reached by the Atlantic breezes from False Bay, which cool the temperature by about 3 ° compared to the flat area. The cooler area, facing south and east, is home to the most sensitive and aromatic white grape varieties. The particular microclimate gives the Chardonnay an extraordinary uniqueness. This South African Chardonnay comes from vines aged 22 to 37 years.
Two complementary South African soils: Glenrosa, which is rockier, poorer in nutrients, and well-drained, limiting the vine’s vigor; and Hutton, which is red, deeper, and well-drained.

In the cellar
71% of the must was fermented in barrels, specifically in a selection of 228-liter Burgundy barriques made of French oak: 24% new, 45% second-use, and 31% in older barrels made of Nevers and Burgundy oak. The remaining 29% was fermented in stainless steel to preserve the wine’s freshness.
The wine was aged sur lie, on the lees, in barrels for 9 months, with occasional barrel rotations to accentuate the character derived from aging on the lees.
