Why we like it

A fine and contemporary South African Cap Classique rosé, combining red fruit, freshness and a very recognizable signature thanks to the presence of Pinotage.

Wine Profile

Pale pink color, fine and persistent mousse. Aromas of fresh strawberry, small red berries, rose petal and citrus. The sip is refined, fresh and mineral, with an elegant finish.

The Simonsig Signature

Produced according to the Metodo Classico (Cap Classique) method, this wine is made exclusively from hand-harvested grapes that are pressed as whole clusters to extract only the free-run juice. Fermentation takes place at a controlled temperature in stainless steel tanks, with malolactic fermentation deliberately omitted to preserve the wine’s full freshness and aromatic intensity.

Perfect for brunch, picnics, aperitifs, seafood, herb chicken and strawberry pavlova.

In the vineyard

The 2024 vintage was marked by good early rainfall, followed by a long warm and dry period. Yields were slightly lower, but the grapes achieved excellent concentration, balance and quality, making the vintage very promising.

In the cellar

All grapes were hand-picked. Whole bunches were gently pressed in pneumatic presses to collect the purest juice, called cuvée. The juice was fermented in stainless steel tanks, at around 14-16°C, with specially selected yeast strains to ensure excellent fruit and freshness.
The final composition of the rosé is determined by meticulous tastings before the different cuvées are expertly assembled, to obtain the most refined and fruity wine. Fermentation in the bottle creates millions of magical bubbles. It is then matured in Simonsig’s cool, dark cellars for at least 15 months, adding layers of complexity to the delicious red berry flavours.
When perfect harmony is achieved, disgorgement removes the yeasts and in the final stage a small amount of dosage is added to obtain a perfectly balanced brut rosé.
