Wine profile

The bouquet releases blueberries, ripe plum, and black cherry, enriched with cinnamon, vanilla, and delicate sweet spices. On the palate, it is rich and velvety, with notes of wild berry compote, blackberry, and plum tart. The tannins are mature and perfectly integrated, accompanying a long, refined, and persistent finish.

Kanonkop's signature

Produced from old bush vines on the slopes of Simonsberg, this Pinotage represents the ultimate expression of South Africa's emblematic grape variety. Traditional winemaking and long aging in French oak enhance its elegance, depth, and aging potential.

Service

Serve at 17-18°C in a large glass. Decanting at least one hour before serving is recommended.

In the vineyard

The grapes come from bush vines, aged between 32 and 66 years, on the slopes of Simonsberg, Stellenbosch. Grown without irrigation on decomposed granite and Hutton soils, these vineyards produce low yields of approximately 5 tons per hectare, ensuring concentration, complexity, and extraordinary longevity.

In the cellar

Fermentation takes place in open concrete tanks at 28°C, with manual punch-downs every two hours. After three days of maceration and malolactic fermentation, the wine ages for 16 months in 225-liter French Nevers barriques, 80% new and 20% second-use.
