L'Ormarins Brut Classique NV - Anthonij Rupert

Wine of Origin South Africa, Franschhoek.

The Chardonnay vines are grown on vertical trellises and are located in Darling and to a lesser extent in L'Ormarins and Robertson. These soils are composed of clay schist and are rich in organic matter. The Pinot Noir comes from vineyards located mainly on the L'Ormarins estate (Franschhoek), to a lesser extent on the Altima (Elandskloof), Darling and Robertson estates, all located on steep slopes at about 180 m above sea level. The soil is in parts decomposed granite and in others alluvial soil.

The grapes are hand-picked and then pressed as a whole bunch. The juices from the different pressings are kept separate. The must is left to rest on the skins and inoculated with yeasts. After fermentation, the wine is separated from the skins and assembled: the second fermentation begins. The bottled wine is kept at 13° C - 15° C for a uniform second fermentation. The wine is aged in the bottle for 2-3 years. During disgorgement, a dosage is added and the bottles are kept for about 3 months after disgorgement before being marketed.
