Why we like it

Maritimo is one of Simonsig's most exclusive wines. Inspired by the great Rhône Valley blends, it is produced in extremely limited quantities and is the result of a tailored approach to four Mediterranean grape varieties. A refined, dynamic, and surprising red wine, capable of combining elegance, freshness, and great complexity.

Wine profile

Deep ruby red with luminous reflections, it offers a bouquet of wild berries, raspberry, and redcurrant, accompanied by delicate floral notes, graphite, aromatic herbs, and fynbos. On the palate, it is precise and vibrant, with very fine tannins, perfectly integrated acidity, and a silky texture that accompanies a long, elegant, and persistent finish.

Simonsig's signature

Each variety is harvested and vinified separately using specific techniques to best enhance its character: spontaneous fermentations, whole cluster usage, carbonic maceration, and co-fermentation of Syrah and Grenache Noir. After 15 months of aging in French barriques, predominantly second and third passage, the blend rests for 3 months in a concrete egg, a technique that promotes the natural integration of the different components while preserving precision, freshness, and aromatic purity.

Food pairing

Perfect with grilled lamb chops, roasted duck, mushroom risotto, grilled vegetables, Mediterranean cuisine, light game, and medium-aged cheeses.

Serving

Serve at 16-18°C in a large glass. Decanting for about 45-60 minutes is recommended.

In the vineyard

The grapes come from selected Stellenbosch vineyards, where Mourvèdre, Grenache Noir, Marselan, and Syrah benefit from the region's Mediterranean climate and a long ripening period that preserves freshness and elegance. Each parcel is harvested separately at optimal ripeness. Production is deliberately limited to just seven barrels, reflecting the artisanal approach that characterises this wine.

In the cellar

Each grape variety is vinified separately with a tailored approach: Mourvèdre with a portion of carbonic maceration, Grenache Noir with whole clusters, Syrah partly co-fermented with Grenache and partly fermented using the submerged cap method, while Marselan undergoes spontaneous fermentation. All wines age separately for 15 months in French oak barriques, predominantly used. After blending, the wine rests for another 3 months in a concrete egg, achieving perfect aromatic integration and a particularly elegant texture.
