Nine Yards Chardonnay - Jordan

Varietal: Chardonnay 100%. Vegan wine.

The ultimate expression of Jordan's terroir, Nine Yards Chardonnay is a reserve Chardonnay made from a selection of grapes from only the best vineyards in the wine estate.

An elegant wine characterized by linear, refreshing acidity and a fruit structure that fills the mouth.

Always elegant aromas of citrus, lime and fragrant oak spice.

Food pairings: Poached veal with béarnaise sauce and butter ravioli with mushroom sauce and truffle oil.

Cap: Screw | Alc 12,5% | RS 1,8 g/l | Total Acid 5,7 g/l | pH 3,35.

Wine of Origin Stellenbosch, South Africa.

In the vineyard

The vineyards are located between 250m and 280m above sea level and enjoy very favorable climatic conditions as they are reached by Atlantic breezes from False Bay and exposed to the east.
Soil: decomposed granite.
Age of vines: 34 years.

In the cellar

After destemming, the grapes are pressed, the must is transferred into traditional 228 liter French oak barrels from selected Burgundian wineries (Damy, Chassin, Rousseau), 77% new and 23% second use.
A percentage of the wine is subjected to natural fermentation in barrels, after which the wine is aged on the yeasts for 9 months with regular manual punching down.
