Why we like it

It is not the classic explosively aromatic Sauvignon Blanc. Jordan chooses a more refined and gastronomic style, where freshness, structure, and complexity coexist in perfect balance. The name Cold Fact refers to the particular cold maceration of the skins, a technique that allows to extract aromas and depth without losing elegance.

Wine Profile

The nose opens with blackcurrant leaf, lime, and passion fruit, followed by Mediterranean aromatic herbs and slight vegetal nuances. The palate is fresh and precise, yet soft and enveloping thanks to aging on fine lees. The lively acidity accompanies a long, mineral, and savory finish, making it a particularly versatile Sauvignon Blanc at the table.

The Jordan Signature

Jordan's philosophy is to enhance the character of the Stellenbosch Kloof terroir. For this reason, the grapes are harvested at different stages of ripeness and subjected to about 6 hours of cold maceration, a technique that delicately extracts aromas and complexity. After low-temperature fermentation, the wine ages 4 months on fine lees, developing greater structure and a pleasant creaminess without sacrificing the typical freshness of Sauvignon Blanc.

At the table

Perfect with oysters, shellfish, sushi, ceviche, fish carpaccio, asparagus, goat cheeses, and delicately spiced Asian cuisine.

Serving

Serve at 8-10°C in a medium-sized white wine glass.

In the vineyard

The vineyards are situated on the eastern and southern slopes of Stellenbosch Kloof, between 220 and 380 meters above sea level, on Glenrosa and Hutton soils. Breezes from False Bay and the cold Benguela Current keep temperatures up to 3°C lower than inland Stellenbosch, promoting slow ripening and the development of intense aromatics while maintaining natural freshness.

In the cellar

After destemming, the grapes remain in contact with the skins for about six hours before soft pressing, in order to extract aromas and structure without excessive vegetal components. The must is then cold clarified, fermented separately at 12-16°C and left to mature for four months on the fine lees. Only after this period are the different parcels blended and bottled.
