Sauvignon Blanc 2022 Cold Fact - Jordan

Wine of Origin South Africa, Stellenbosch.

The vineyards are south facing and located on the hills around Stellenbosch, about 400m above sea level. This area enjoys very favorable climatic conditions, as it is reached by the Atlantic breezes from False Bay, which cool the temperature by about 3 ° compared to the flat area. The particular microclimate and the use of innovative techniques in the cultivation of vines (vertical espalier cultivation and treatment of the foliage thinned towards the center to allow better ventilation), allow to emphasize the intensity of the aromas of Sauvignon Blanc, which comes from vines 39 years old.

After harvesting in the early morning, the grapes remain on the skins for about 6 hours and go through a soft pressing. The must is then cooled for 2 days before being decanted and inoculated with selected yeasts. All crops from different blocks of the vineyard are kept separate and fermented between 12-16 ° C.
