67% of the must is fermented in 228L French oak barrels of 2nd and 3rd use and 33% in 400L Italian clay amphorae for 6 months. Malolactic fermentation takes place both in wood and in amphorae.
The amphora has the natural ability to keep the marc in constant suspension during fermentation. The must is then left to mature āsur-lieā for 6 months, with occasional punching down.
Four barrels undergo natural fermentation. No sulphide is added during the vinification, but only at the time of bottling.
