67% of the must is fermented in 228L French oak barrels of 2nd and 3rd use and 33% in 400L Italian clay amphorae for 6 months.
The amphora has the natural ability to keep the marc in constant suspension during fermentation. The must is then left to mature “sur-lie” for 6 months, with occasional punching down.
Four barrels undergo natural fermentation. No sulphide is added during the vinification, but only at the time of bottling.
