Why we like it

It's a Sauvignon Blanc that breaks away from the more aromatic and immediate stereotypes. The fruit is present, but it's accompanied by notes of bread, herbs, and sea, with a dry and saline finish. We chose it for those who love complex and textural white wines, capable of standing up to food and evolving in the glass, without losing the grape's recognizable freshness.

Wine Profile

The entry is fresh and floral, with elderflower and melon. The mid-palate becomes more complex: sourdough and a maritime nuance emerge, supported by a soft but not heavy texture. The acidity accompanies the sip without being sharp. The finish is long, delicately creamy, dry, and saline.

The Winery's Signature

It comes from a single 39-year-old vineyard. 67% of the must ferments in second and third-use 228-liter French barriques, and 33% in 400-liter clay amphorae. A portion ferments spontaneously. After malolactic fermentation, the wine remains on its lees for six months, with occasional barrel rotations. The absence of sulfites during vinification and aging contributes to a less conventional and more layered profile.

Food Pairing

Pairs with creamed cod, herb risotto, baked salmon, and vegetable pasta dishes. Interesting with sushi, seaweed-based dishes, goat cheese, and white meats accompanied by light sauces.

Serving

Serve at 10-12 °C. Allow it to open for 10-15 minutes in the glass. Prefer a medium-sized white wine glass.

In the vineyard

The vineyard faces south and is located between 220 and 365 metres above sea level, on decomposed granite. Stellenbosch Kloof receives breezes from False Bay and the Benguela current, which moderate temperatures and bring morning mists. The vines are 39 years old and are planted with the Weerstasie clone.

In the cellar

The grapes were harvested between February 5th and 25th, 2021. The must ferments 67% in second and third-passage French barriques and 33% in clay amphorae. Malolactic fermentation occurs in both containers. This is followed by six months on the lees, with occasional bâtonnage of the barriques; four barrels ferment spontaneously. No sulfur is added during winemaking.
