Cabernet Sauvignon Shiraz - Simonsig Wine Estate
IN BRIEF
📍 Stellenbosch · Cabernet Sauvignon 60%, Shiraz 40%
Soft and fruity red blend
10-12 months aging
Used French oak and staves
Why we like it
This is a red wine designed for drinkability, not extreme concentration. Cabernet Sauvignon provides structure, while Shiraz adds ripe fruit and spice; the acidity keeps it lively. We chose it because it offers a versatile South African blend, suitable for casual dining and for those looking for a soft but not flat red wine.
Wine Profile
The entry is juicy, with ripe red berries and dark cherry. Raspberry, a hint of cola, and vanilla emerge in the mid-palate. The body is medium, with lively acidity and soft tannins. The finish is round, fruity, and clean, with a slight spice.
The winery's signature
After gentle destemming, the grapes are selected and transferred to fermentation vessels. Skin contact lasts 7-10 days, followed by soft pressing. Most of the wine ages in stainless steel with quality French oak staves; a smaller portion ages in old French barriques. The total aging lasts 10-12 months before blending and bottling.
Food pairings
Pairs well with devil's pizza, hamburgers, beef carpaccio, and barbecue. In Italian cuisine, it is suitable for pasta with ragù, meatballs in sauce, and lasagna.
Serving
Serve at 15-18 °C. Does not require decanting; a few minutes in the glass are sufficient. Use a medium-sized red wine glass.

In the vineyard
In the vineyard
The grapes are harvested once they reach ripeness, suitable for a soft and fruity style. The season was characterized by good water reserves after winter, initially cool spring and summer, and a warmer and drier final phase, which accelerated ripening and concentrated the flavors.
In the cellar
In the cellar
The grapes are gently destemmed and the berries selected. Maceration lasts 7-10 days, followed by soft pressing. Most of the wine matures in steel with French oak staves; a smaller portion is aged in old French barriques. Total aging is 10-12 months.
