The Pinotage is a vine originating from South Africa, born in 1925 from a singular cross between Pinot Noir and Hermitage (or Cinsaut). The father of Pinotage was Abraham Izak Perold, a university professor and winemaker who sought the best resistance to the dry summers of the Western Cape region in South Africa.

Pinotage with crimson red nuances. The nose has an intense scent of red currant, strawberry confit and dried rose petals. On the palate, the wine is medium-bodied, with flavors of sweet red fruits, ripe cherries and a hint of spice. Consistent and elegant balance between fruit, fresh acidity and tannin structure.

In the vineyard

In 2019, the harvest was still affected by the difficult climatic conditions of previous years, despite the heaviest rains of the season. The harvest produced small but very good quality grapes. The vineyards are 7 to 22 years old and are cultivated in clayey soils, locally referred to as "Hutton". The average production of Kanonkop Kadette Pinotage is 6-7 tons / ha. Modest additional watering.

In the cellar

Fermentation takes place in open concrete tanks at a temperature of about 28 °. The grapes are left to macerate on the skins for 3 days. After malolactic fermentation, the wine matures for 12 months in second and third use 225 L Nevers French oak barriques. Bottling and refinement of a few months before release follows.
