Kadette Cabernet Sauvignon 2021 - Kanonkop

Warmer periods in the latter part of winter resulted in uneven budding and flowering. Moisture levels in the soils were satisfactory throughout the growth and ripening phase, and minimal water stress was noted on the vines. The late start of the 2021 harvest was one of the hallmarks of this vintage. The cooler growing conditions of the 2021 vintage produced elegant wines with softer tannic structures that will make them accessible and drinkable right away.
Age of vines: 10 to 20 years old.

Fermentation took place in open-top concrete fermenters at 28°C. During fermentation, the pomace was subjected to mechanical punching down every 2 hours. The juice was separated from the skins after 5-6 days. After malolactic fermentation, the wine was aged for 12 months in old 225-liter French oak barrels.
