On the nose L'Ormarins Blanc de Blancs offers aroma of biscuit and toasted bread with hints of honey.

On the palate hints of lime and citrus and then the sparkling wine opens up in richer and sweeter notes with a persistent finish. You perceive the elegance, the structure and the perfect balance between intense vibrations and sweetness. Pair with: Oysters, shellfish, salads. Excellent as an aperitif. Alcohol: 12.5% ​​

In the vineyard

The vineyards of Altima (Elandskloof) provide the majority of the grapes that create this excellent South African Blanc de Blancs. The soils, located on steep slopes, are composed of clayey shale, with a high water retention capacity and rich in organic substance, which allow vigorous growth of the vines.
Further down the valley and along the rivers, the vines grow on dark alluvial soils which favor the growth of very healthy grapes. The Chardonnay vines are grown in vertical espalier.

In the cellar

The grapes are harvested by hand and whole bunch pressed. The juices resulting from the different pressings are kept separate. The must is left to rest and inoculated with yeasts for fermentation. Approximately 20% of the Blanc de Blancs is fermented in barrel for approximately 12 weeks, before being combined with the wine not aged in barrique. The base wine obtained from the different processes is filtered and bottled for the second fermentation in bottles stored at 13°-15°. Followed by maturation for 4 years in the bottle. Disgorgement then takes place; Blanc de Blancs is further refined for approximately 8 months before marketing.
