"Cold Fact" is the album by singer-songwriter Sixto Rodriguez, a cultural phenomenon in South Africa and internationally known thanks to the film "Searching for Sugar Man". Cold Fact is also a game (in search of sugar man, i.e. aromas), with which Jordan identifies the cold soak technique (pre-fermentation) used to bring out the intense flavors of Sauvignon Blanc, a highly aromatic grape. Jordan\'s Cold Fact consists of the cooling process of the grapes, which are then left on the skins for many hours.

On the palate this Sauvignon Blanc presents aromas of leaves of blackcurrant and of fig of the Cape, balanced by a complex fruity and sweet structure of Provencal herbs.

Pairings at the table: Ideal with dishes of vegetarian cuisine, salads and pasta with fresh vegetable sauces, fish e fresh cheeses. Excellent as an aperitif.

In the vineyard

The vineyards are south facing and located on the hills around Stellenbosch, about 400m above sea level. This area enjoys very favorable climatic conditions, as it is reached by the Atlantic breezes from False Bay, which cool the temperature by about 3 ° compared to the flat area. The particular microclimate and the use of innovative techniques in the cultivation of vines (vertical espalier cultivation and treatment of the foliage thinned towards the center to allow better ventilation), allow to emphasize the intensity of the aromas of Sauvignon Blanc, which comes from vines 37 years old. The climatic conditions of the 2020 vintage, with the intense rains of the previous winter, led to an excellent season for white wines. The production was above average with healthy grapes of excellent quality.

In the cellar

After harvesting in the early morning, the grapes remain on the skins for about 6 hours and go through a soft pressing. The must is then cooled for 2 days before being decanted and inoculated with selected yeasts. All crops from different blocks of the vineyard are kept separate and fermented between 12-16 ° C.
