Origin
Origin
In the vineyard
In the vineyard
From a single Chenin Blanc vineyard located on Paardeberg Mountain, with vines approximately 15 years old and an average yield of 5 tons per hectare. The soils, predominantly decomposed granite, contribute to the wine's natural freshness, acidity, and aging potential. The grapes were hand-picked in the early morning, into small crates, at 23 °Balling.
In the cellar
In the cellar
The grapes were destemmed and selected to eliminate unsuitable berries. After crushing, the must was left to decant overnight; only the cleanest free-run must was transferred to the fermentation vessels. The wine fermented spontaneously in ceramic amphorae, Diamanté tanks, and French barriques, then matured on lees for eight months before the final blending.
