A fabulous classic method from the Anthonij Rupert winery, L'Ormarins Private Cuvèe shows fine but vigorous perlage and shy but complex aromas of citrus leaves, baked tarte tatin and a hint of barley lily. Its diamond-like brilliance, a lemon-gold color, belies the vintage and the time spent in bottle.
On the palate, aromas of crisp green apple mingle with a slightly saline maritime note, before revealing baked bread, sesame and toasted walnut. Complex and sophisticated, with a superb balance of acidic freshness and vivid fruit expression.
A well-balanced, structured and persistent South African classic method, which remains lively with a citrus twist to the end.
Food pairings: Excellent on its own, it pairs perfectly with all seafood dishes, especially shellfish and oysters.

Anthonij Rupert's Altima estate is located in Elandskloof, an isolated valley surrounded by a mountain range that rises 1 km above the valley floor.
The steep topography of the valley, combined with the mountains above it, results in a distinctly cool continental climate. The quartz sandstone of the Table Mountain Sandstone group stands out against the higher mountains. The main soil type found in the terrain is a decomposed shale. This unique site produces fruit with high natural acidity and low pH levels, which contribute to the wine's aging potential.

Produced at the Anthonij Rupert Cap Classique winery in Franschhoek, La Garonne. Grapes are hand-picked and whole cluster pressed. The best juice (Tête de Cuvée) from Chardonnay and Pinot Noir is rested overnight before being racked off the yeasts and fermented. Only the best fermented base wine was selected, distinguished by finesse and elegance. After secondary fermentation in the bottle, the wine was aged for another 89 months on the lees before being disgorged. After disgorgement, the wine was corked for 6 months before release.
