Profilo del vino

Pepe nero, frutti rossi, note floreali, rosmarino e spezie essiccate. Al palato è equilibrato, gastronomico e ben definito, con finale fresco.

Ideale con carni arrosto, agnello, funghi, piatti speziati e formaggi stagionati.

Le uve di Syrah utilizzate per questo vino provengono dalla regione a clima fresco di Elgin.

In the cellar

L’80% delle uve è stato diraspato, mentre il 20% è stato fermentato a grappolo intero.

La fermentazione alcolica è avvenuta in piccoli contenitori da 1 tonnellata, con un’estrazione misurata ottenuta tramite rimontaggi e follature. Dopo la pressatura in pressa a cestello, il vino ha svolto la fermentazione malolattica in botte ed è poi maturato per 16 mesi in barrique di rovere francese, di cui 60% di secondo passaggio e 40% di terzo passaggio.
