Why we like it

Cuvée Royale is the most precise and rigorous expression of Simonsig's Cap Classique. Aging on lees adds bread notes and complexity, while the absence of malolactic fermentation maintains a crisp freshness and a very long citrus profile. We chose it for those seeking South African sparkling wines for important aperitifs or for a full meal, offering more depth than an immediate style.

Wine Profile

The entry is fine and taut. Lemon, lime blossom, and apple open the sip; followed by stone fruit, freshly baked bread, and a mineral note. The structure is delicate yet persistent. Acidity remains a protagonist and accompanies a long, dry, and slightly toasted finish.

The Winery's Signature

Only the best Chardonnay grapes are selected and whole-bunch pressed, extracting the finest part of the must. The first fermentation occurs in stainless steel to preserve freshness and fruit, and malolactic fermentation is not carried out. The second fermentation takes place in the bottle, followed by at least three years on lees. This is the prestigious cuvée born from the experience of Simonsig, a pioneer of South African Cap Classique.

Food Pairing

Perfect with oysters, shellfish, caviar, and raw fish. It also pairs well with mixed fried seafood, artichokes, tempura, and delicate appetizers. At the end of the meal, it can accompany sorbets and slightly sweet fruit desserts.

Service

Serve at 6-8 °C without over-chilling. Use a tulip-shaped glass, wider than a flute.

In the vineyard

Chardonnay grapes are selected from the best vineyards in Stellenbosch. 2017 was hot and dry, with lower yields and small berries, but cool nights during ripening preserved acidity and low pH. Harvesting is manual and selection is exclusively for the prestige cuvée.

In the cellar

The whole bunches are gently pressed, and only the finest fraction of the must is used. Primary fermentation takes place in steel, and malolactic fermentation is not carried out. After tirage, the second fermentation occurs in the bottle. The wine remains on the lees for at least three years before disgorgement.
