Origin

Wine of Origin Coastal Region, South Africa.

In the vineyard

The Merlot grapes are grown in a cool-climate site high in the Darling Hills, where the vineyard overlooks the cold Atlantic Ocean and benefits from the constant cool winds that blow across it throughout the growing season. The Cabernet Sauvignon grapes are grown in the Helderberg district of Stellenbosch. Meticulous canopy management ensures optimal sun exposure, enhancing the color, tannins, and ripeness of the fruit.

In the cellar

The grapes are hand-picked, destemmed and the berries meticulously selected before fermentation, which takes place in steel tanks with minimal intervention to enhance the terroir.
Fermentation lasts 7 to 12 days, with gentle pumping over throughout. The wine is then aged for 12 months in 300-liter French oak barrels, 10% of which are new.
