Why we like it

Labyrinth is born from the union of three different vineyards on the Simonsig estate, each contributing a unique characteristic to the wine. The result is an elegant and complex Cabernet Sauvignon, combining fruit intensity, freshness, and refined tannins in a typically Stellenbosch style.

Wine profile

The nose opens with aromas of blackberry, violet, graphite, and pencil, accompanied by delicate herbaceous undertones. The palate is full and harmonious, with notes of blackberry compote, aromatic herbs, and fine spices. The silky and perfectly integrated tannins support a long, fresh, and elegant finish.

The Simonsig signature

Labyrinth is crafted from the blend of the best grapes from three Cabernet Sauvignon vineyards on the estate, grown on different granite and schist soils. Careful winemaking and long aging in French oak allow every nuance of the terroir to be enhanced, giving rise to a wine of great balance and depth.

The name Labyrinth evokes the complexity of the vineyard and the wine: three parcels, three terroirs, and a single Cabernet Sauvignon capable of expressing all the elegance of Stellenbosch.

Food pairing

Perfect with braised beef ribs, roasted lamb, grilled meats, rich pasta with ragu, and aged cheeses.

Serving

Serve at 17-18°C in a large glass. Decanting for about an hour before tasting is recommended.

In the vineyard

The grapes come from three distinct vineyards on the Simonsig estate, all located in Stellenbosch with a north-north-east aspect. Two vineyards are situated between 200 and 250 meters above sea level on decomposed granite soils, where afternoon breezes from the Atlantic promote slow ripening and excellent fruit purity. The third vineyard, cultivated on shale soils at approximately 150 meters, contributes aromatic elegance and particularly fine tannins.

In the cellar

The grapes were carefully hand-picked and selected in the vineyard, then destemmed and hand-sorted in the cellar. After two days of cold maceration, fermentation was conducted with regular pump-overs, followed by extended skin contact for up to 17 days. Malolactic fermentation and aging took place in French barriques for a total of 18 months, using a combination of new and used barrels to preserve elegance and balance.
