Why we like it
Redhill represents one of the most elegant expressions of Simonsig's Pinotage. It originates from a single bush vine vineyard cultivated on characteristic red soils of Stellenbosch, where low yields and slow maturation result in an intense, refined, and highly personal wine.
Wine profile
The bouquet opens with aromas of wild berries, raspberry, red cherry, cinnamon, cedar, and liquorice. On the palate, it is rich yet perfectly balanced, with crisp fruit, vibrant acidity, and soft, velvety tannins. The finish is long, elegant, and complex, with a pleasant spicy persistence.
The Simonsig signature
Redhill is exclusively made from a historic bush vine vineyard on the estate, cultivated on Tukulu soils with the typical red colour that gave the wine its name. Careful winemaking, the partial use of whole bunches, and long aging in French oak enhance the identity of this single-vineyard Pinotage.
Food pairing
Perfect with grilled lamb chops, duck, game, roasted meats, and aged cheeses.
Serving
Serve at 16-18°C in a large glass. Decanting for about 30-60 minutes is recommended.

In the vineyard
The grapes come from a single bush vine vineyard located in Stellenbosch, between 155 and 165 meters above sea level. The deep Tukulu soils, rich in iron oxides, are known for producing Pinotage with great aromatic intensity, soft tannins, and excellent freshness. The low yields and careful management of the old vines favor an extraordinary concentration of fruit.

In the cellar
The grapes were hand-picked and selected, with the addition of 20% whole clusters to enhance complexity and aromatic finesse. After two days of cold maceration, fermentation took place in open-top tanks with regular punch-downs. Once fermentation was complete, the wine underwent malolactic fermentation in 225-liter French barriques, where it remained for 19 months (75% new oak and 25% second-use), gaining structure and elegance.
