In the vineyard
The grapes come from high quality vineyards located in the Stellenbosch, Elgin and Swartland areas. The vineyards were planted on different soils, each specially selected for its specific contribution to the wine that is produced. The vineyards are strictly managed: a thinning of the shoots is performed in mid-October and again at the beginning of December, leaving only the most flourishing ones. The thinning of the bunches and the method of harvesting are carried out with the aim of favoring the perfect ripening of the grapes and therefore of maximizing the fruit aromas and the concentration of the wine. The grapes are harvested by hand at the beginning of March, and all the bunches have been selected in the vineyard to guarantee their perfect quality.

The grapes from each vineyard ferment separately in stainless steel tanks for an average of 12-16 days and most of the must is left on the skins for a further 1-2 weeks. In the traditional Syrah style, part of the fermentation takes place by preserving the grape stalks, to favor the sapidity of the wine. After malolactic fermentation, the wine ages for 14 months in 300-liter French oak barrels (30% new).
