Wine Profile
Luminous golden color. Floral aromas of Muscat, liquorice, honey, dried mango, and sultanas. On the palate, it is sweet, rich, and balanced, with notes of macadamia, toasted pecan, and cookie dough.
Food Pairing
Ideal with dried fruit desserts, pastries, blue cheeses, or as a meditation wine.
Serving
Serve chilled, in small glasses.

In the vineyard
In the vineyard
The vineyard is located in Breedekloof, near the Du Toitskloof mountain range. The long, cool nights, early shade, and the Smalblaar River terroir promote slow ripening and the development of delicate and complex aromas. Alluvial soils rich in stones and sandy-silty.
In the cellar
In the cellar
Grapes harvested at 24° Balling and transported to the cellar in refrigerated trucks. After destemming, the grapes remained in stainless steel for three days at low temperature for cold maceration. Spontaneous fermentation on skins at 16°C; pressing at 14° Balling and immediate fortification to approximately 17% with 2015 Colombard spirit. Matured for 6 years in old French barriques. The wine is then hand-bottled, unfined and unfiltered.
