Alessandro Borio, a former prisoner of war, found a home in South Africa and befriended the Malan family. A master bricklayer, he built the first concrete wine tanks in Simonsig, still used today to produce this prized Shiraz.
This Shiraz displays an intense, dark crimson color with aromas of violet and blackberry , combining floral elegance and fruity richness. Vibrant flavors of blackberry, raspberry, and plum emerge on the palate, supported by soft tannins that ensure structure and finesse. Balanced and expressive, it offers a harmonious blend of bold fruit and an elegant structure, with a soft, lingering finish.
Food Pairings: This South African Syrah pairs well with stuffed mushrooms, gourmet burgers, venison pie, barbecued ribs, pizza, and meat.
Serving temperature: 15° - 18°.

In 2021, abundant winter rains and soil moisture prepared the vines for a late, cool season. Careful management avoided fungal diseases. The harvest produced abundant bunches, ripening slowly with concentrated flavors, then accelerated by warm, dry weather, resulting in small, intense clusters.

The grapes, hand-harvested between March 8 and 24, 2022, at a ripening point of 21.6 to 24.8 mm, were destemmed and cold-macerated for two days. Fermentation lasted 9-15 days on the skins, followed by malolactic fermentation in stainless steel and barrels. A small portion of carbonic macerated Shiraz was included in the blend. The wine aged for 12 months in French oak barrels.
