Why we like it
An approachable yet well-structured South African Méthode Cap Classique, combining fine bubbles, freshness, and a pleasant roundness from lees aging.
Wine profile
Light golden color, delicate bubbles, notes of lemon cream, almond biscuit and citrus. The palate is fresh, mineral, creamy and well balanced.
Food pairing
Excellent as an aperitif, with oysters, panko prawns, seafood dishes, cheeses and creamy preparations.
Serving
Serve well chilled, ideally at 6–8°C.

In the vineyard
The grapes come from the Western Cape and are harvested early in the season at lower sugar levels, to preserve the natural freshness required for the production of base wines for Cap Classique. Hand-harvested at dawn, quality selected and transported in small crates.
In the cellar
In the cellar
Production begins with whole cluster pressing in separate batches. Only free-run must was used. The base wine remains on its primary lees until blending; after stabilization and filtration, the liqueur de tirage is added for the second fermentation in the bottle. Aging on the lees for at least 12 months.
