In the vineyard
In the vineyard
Shiraz grapes are hand-picked in the early morning from vineyards with an average age of about 10 years. Soils include structured red and yellow clays with coarse gravel, well-drained sandy-loam soils with high stone content, and some partially weathered schist components. Average yield is 6.8 tonnes per hectare.
In the cellar
In the cellar
The grapes were cooled to 4°C, destemmed, and then sorted berry by berry. Approximately 75% of the berries were gently crushed, while the remainder were kept whole. After a 3-day cold maceration at 9°C, fermentation occurred with regular punch-downs and pump-overs. Malolactic fermentation took place in 300-liter French barriques, with 30% new oak and 70% second and third passage. Total aging: 18 months in French oak.
