The South African classic method , known locally as Méthode Cap Classique (MCC) , represents the pinnacle of quality sparkling wine production. Produced using the same method used in Champagne, MCC involves a second fermentation in the bottle, which gives the wine its characteristic refined effervescence and aromatic complexity.

Among the pioneers of the MCC is the Simonsig winery, which produced the first South African classic method sparkling wine in 1971.
